Untreated olives " senceres " are pickled in salty water. Causing a fermentation, the olives are conserved in a natural manner. The fermentation may continue. If you notice bubbles at the surface, you can influence this process by changing the water now and then. On principle olives do have an intense and slightly bitter flavour. Just to let you know, the natural bitterns are part and parcel of the mediterran diet. Natural bitterns stimulate gastric juices, facilitate digestion and strenghten the immune system. You can eliminate the bitterness, the more you change water the less the olives taste bitter.
