Rocket salad with goat cheese balls

Preparation

Wash the rocket and remove the hard stems, if necessary pluck them smaller.

Wash the strawberries in the same way, remove the flower stalk and halve them, or quarter them if necessary. Fillet one orange. Arrange everything on two plates.

Put the AMETTLA mixture n°3 (almond, dried apricots, dried lemon zest, ...) in a bowl. Halve the goat's cream cheese, form into small balls and coat with the AMETTLA mixture.

Then arrange the breaded cream cheese balls on the salad.

For the dressing, mix 6 tablespoons each of freshly squeezed orange juice, olive oil and balsamic vinegar orange. Add the rest of the AMETTLA mixture, mix well and pour over the salad.

Serve with fresh bread.
