Crespí Organic dried ramallet tomatoes
The rustic dried Ramallet tomato is an indispensable part of Mallorcan cuisine. Through gentle drying at low temperatures and without the addition of sulphur, the whole aroma of the autochthonous tomato variety is preserved.
If you prefer to use the tomatoes soft, you can soak them in olive oil or simply sprinkle them with a little lukewarm water. To prepare a delicious sauce, marinate small pieces of tomato together with garlic, salt, oregano, perhaps some mint, a good vinegar and fine olive oil for 2 hours.
