Porc Negre Salchichon dry hard sausage of black porc

The black pig is one of the oldest pets on Mallorca and is officially registered as a unique breed. Its meat is characterized by a particularly high content of unsaturated fatty acids. In our traditional farm Cuixot de Porc Negre Mallorquí the meat for our typical Salchichon is taken from wild animals. The aroma is best developed when the sausage is airy for 5 minutes before eating. Short term availability.

Best pork and bacon are ground, marinated with peppers, salt, garlic and spices and then dried. The sausage is cut-resistant and spicy in taste.

(Fatwashing out is possible, a natural white / gray mold can develop on the sausage skin during storage, a natural process resulting from the leakage of fat and minerals.   Just wash off.)

Black pig meat and bacon from Mallorca, salt, spices, lactose, dextrin, MILK protein, emulsifiers (E-405i and E-450iii), flavourings, flavour enhancer (E-621), antioxidant (E-316), preservatives (E-250 and E-252), colourant (E-120).

Cuixot de Porc negre Mallorquín

The traditional Mallorcan manufactory "Cuixot de Porc Negre Mallorquín" specialises in the production of sausage and ham from the black pig. The philosophy of the Mallorcan company is to produce only products of hearty and highest quality. For this purpose, the typical Mallorca pigs are selected according to the strictest criteria. The first-class quality of the sausage specialities from Mallorca is subject to permanent control. The black pig is a unique breed on Mallorca. Its unmistakable characteristics are the black colour, the symphatically forward hanging floppy ears and the two skin flaps on the neck. The black pig from Mallorca is fun-loving, harmonious, rustic and strong. It was one of the first domestic animals to be settled in Mallorca and has had an exceptional importance in the family economy of the rural population for several centuries. From an early age, the founder of the company, Mallorcan Jose Abellan, has been passionate about the autochthonous Porc Negre pig. Extremely loving and caring rearing coupled with special, balanced nutrition makes it possible to produce Mallorcan sausages of exclusive quality.
