Saffron with its unmistakable aroma is used in small quantities to give rice dishes and soups an extravagant flavour and an intense golden-yellow colour. For example, the fine threads are a typical spice for Spanish paella.
Saffron is very precious and is also called "red gold". It is advisable not to let the threads cook for long. Crush the spice in a mortar or soak it in warm water for a few minutes and add it with the liquid at the end of cooking.
