Majorcan black olives D.O.P.
The black, fully ripe olive is from the Tramuntana mountain and it´s a culinary delight for a connoisseur. The olives get their color through a long ripening time on the tree. The "Majorcan olive" is harvested by the local olive farmers by hand and they are processed carefully in the traditional manner by the agricultural cooperative Sant Bartomeu in Sóller. After pickling in brine the olives go with a shot of virgin olive oil to the screw-top jar. They have a strong but a gentle taste - they are really good like an aperitif or like a side dish to cheese or sausage sandwich. They could be also wonderful with a glass of "Xa" red wine, with a few Quely - digestive biscuits like a small in-between snack.
