The typical, green olive from the valley of Tramuntana is known for it's hearty taste.
Before pickling, the olives are smashed (trencada) so that the spice stock can penetrate the pulp.
You can now give the olives your own taste: the olives become milder if they are placed in water.

Son Mesquidassa
The Son Mesquidassa farm became the property of the Roselló family in 1986, on that same year they planted more than 150,000 olive trees and built the oil mill. The farm is located in Felanitx and is part of the Denomination of Origin D.O. Oli de Mallorca. The philosophy of the company and the cultivation system seek maximum work efficiency, to obtain a higher quality and quantity, reaching 200,000 liters of oil thanks to more than one million kilos of olives.
