Orange ice cream with sweet pesto

Preparation

Toast the almonds in a small pan until golden brown, then leave to cool.

In a small tall container, place the chopped basil sprigs, the almonds, the sugar, the almond oil and half a teaspoon of grated orange zest.

Cut the orange in half and add a few drops of orange juice to the container. Process all the ingredients in a kitchen blender or with a hand blender to make the pesto, adding a few more drops of orange juice if necessary. Fillet the second orange.

Place a large scoop of orange ice cream on a dessert plate and garnish with the pesto, cream and orange fillets. Serve immediately.
