Allioli traditional garlic cream

The traditional version uses only garlic, olive oil and salt

Preparation

Peel the garlic cloves, cut them in half and put them in a mortar.

Add the salt and rub the garlic into a fine paste with the pestle.

Then slowly pour in the oil in a very fine stream, stirring constantly until the paste has a buttery creamy consistency.

Serve the allioli immediately, as the cream collapses again relatively quickly.
