Vegetables pickled in olive oil

Preparation
Quarter the aubergines and cut into thin slices. Cut the courgettes into slices. Cut the peppers into strips.
Heat the olive oil in a pan and fry the vegetables one by one and set aside.
Chop the garlic cloves and sauté briefly. Chop the herbs and add to the pan, add the rest of the vegetables and season well.
Pour everything evenly into preserving jars and leave to cool completely.
Then pour in olive oil, seal well and store in a cool, dark place.
