Chicken skewers on orange sauce

Preparation

Cut the chicken breasts in half lengthwise, then cut the breast halves first into strips and then into pieces. Salt and pepper the pieces and skewer them lengthwise.

Finely dice the carrot and onions.
Heat a pan, add "Salsa Sol Orange picante" to the pan and stir-fry the vegetable cubes until translucent, remove the vegetables from the pan and set aside.

Then fry the skewers on all sides in the same oil.

Meanwhile, halve and juice the oranges and lemon.

Remove the skewers from the pan and deglaze the stock with sherry, simmer briefly and then pour in the citrus juice.
Grate some orange zest with a fine kitchen grater and add it, let the broth simmer and reduce, at the end let the mint sprig and the vegetables simmer a little more, then pour everything through a sieve, press the vegetables lightly through the sieve with a fork.

Season the sauce with salt and pepper and heat the skewers in the boiling sauce. Garnish with orange wedges or mint leaves.
