The olives "sencera" that we offer here, they are pickled natural in brine. That's the fermentation process and preserve the olives. This process can carry on in a natural way and it´s perceptible if you can see fizzing in the glass. It´s easy to interrupt this process. You just have to replace the brine with fresh water and water the olives several times.
The olives are fundamentally bitter. This bitter principles from the olives are an important component from the Mediterranean diet, because natural bitter principle strengthen the immun system and regulate the digestion. With the watering from olives you can influence the bitterness from the olives. The more you water the olives, the more mild becames its taste.
