La Luna Longaniza dulce
The “longaniza dulce” is the same pasta as the sobrasada but it has been stuffed into a fine casing to speed up the curing process so it can be eaten as soon as possible. The paprika gives it a bright red color and serves as a preservative.
The Mallorcan people consume it with brown bread if possible or toasted on the grill, one way or the other, it is simply delicious.

The longaniza is a typical Mallorcan sausage, very similar to the sobrasada, but in a finer format. It is made from selected parts of the pork, especially the lean meat, and seasoned with various spices and paprika, which gives it its characteristic reddish color. The product is not cooked, it is the spices and the peppers themselves that make it suitable for consumption during the curing process.
The longaniza is usually used to make “torradas” and is simply eaten with bread, but there are also recipes where it is used. For example, simple fried eggs get additional flavor from a small amount of chopped longaniza; it can also be fried; used as an accompaniment to a pizza or even in stews. It also goes very well with cheese. You can also serve it as a snack: on a cracker with a hint of honey. The skin is a crispy snack when grilled.
