TASTING NOTES
Colour:
Bright cherry red with violet rim.
Bouquet:
Aromatic complexity with dominant red and black fruit, carob and spicy background (scrubland and eucalyptus).
Taste:
Medium-high body, with nerve, powerful, expressive and long.
Goes well with rice dishes, roast red meats, roast lamb, "jamón de bellota" ham and sheep's cheeses.

The Gargollassa variety is the result of two decades of experimentation and hard work to recover an autochthonous Mallorcan variety that was on the verge of extinction. Ancient documents, including the famous compilation of Archduke Luis Salvador, describe it as one of the most recommended varieties for the production of quality wines.
In 1998, Bodega Ribas found the last 3 remaining specimens on the island. In 2004 the Fluxà family decided to collaborate in the recovery of this variety and 2,500 vines were grafted on the Son Forteza estate. With a great potential and aromatic profile, this pre-phylloxera variety, descendant of the Heben and Monastrell varieties, has come to remind many of a Pinot Noir due to its delicate and elegant nuances. The Syrah variety provides structure and prevents oxidation of the delicate Gargollassa, allowing for a longer ageing period.

Bodegas Ribas
The Ribas de Consell wine cellar, with more than three hundred years of experience in spanish wine production, is one of the oldest wineries on the island of Mallorca. The historic winery and production rooms are located in a listed mansion from the XVIII. century. The descendants of Pedro Ribas attach great importance to continuing the viticulture in his sense, with absolute respect for the land and its history. More than 40 hectares of vineyards are cultivated by hand and are among the oldest plantations with the largest variety of native grape varieties on the island. The bodega is currently working on the conversion to organic viticulture.Ageing: 12 months
Type of barrels: 100% French oak 500L (Gargollassa) and 225L (Syrah). 1st, 2nd and 3rd year barrels.
