It could be said that Es Roquissar oil, produced at Son Moragues, is the archetypal oil of the Serra de Tramuntana. It comes from the highest parts of the estate's olive groves, where the olive trees grow among the rocks, sometimes in the most unsuspected hollows, and where there seems to be barely enough soil for a tree to survive for centuries, not only surviving, but also producing olives generously year after year.
