Limes thrive on Mallorca just as well as lemons. But these two fruits are absolutely different in taste and also in colour.
The lime tastes quite sour and has an intense, spicy note. It is never eaten on its own, but rather used as an ingredient to add an aromatic sour flavour to a variety of dishes. It's also an indispensable accompaniment to many cocktails, such as the famous "mojito".
Limes contain vitamin C, potassium, calcium and phosphorus. The fruits store well in a cool, dark room. Stored at room temperature, they dry out more quickly and must therefore be consumed earlier. The juice and peel of the fruit can be frozen.
In our latitudes, the lime tends to be yellow in colour due to the coolness of the night. It is neither unripe/overripe nor old. It simply adapts to the climate conditions. All citrus fruits retain the green colouring of the peel only if the night temperatures are sufficiently cold.
