The tomato "Ramallet" is a very special species of this species. It is, together with extra virgin olive oil, the main ingredient for the preparation of the popular "Pa amb Oli", the Mallorcan vesper bread. The purée consists of 91% "Ramallet" tomato, virgin olive oil, a little lemon juice and a pinch of salt. It contains neither artificial preservatives nor colourings and should be kept in the refrigerator after opening. Excellent as a pasta sauce...simply refine to your own taste.
