Marine fennel is a coastal plant that grows on rocky shores within the vicinity of the oceans ´spray. It is a summer-flowering plant similar to the wild fennel, hence the name. The feathery, fleshy leaves are carefully harvested, washed, and then placed in a mixture of mild vinegar and salty water, which is why it has a prolonged shelf life. Due to its high vitamin C content and its delectable spicy taste, sea fennel is an integral ingredient of the Majorcan cuisine and is often mad euse of to enhance local specialities such as "pa amb oli" or "ensaladilla" and is an exceptional complement to a variety of wholesome rice dishes.
