These green olives from the Soller-valley in Mallorca, are crushed (trencada) before being pickled. These delicate, green fruits are then inserted in our special brine for the purpose of fermentation. The Mallorcans love them this way! They are bitter and salty in flavour. By watering down these olives, you can establish your own personal taste. As a serving suggestion, we recommend adding olive oil and fresh herbs.
